This is the perfect dish to accompany some grilled seafood or chicken skewers. It’s much lighter than using fried rice and provides you with a tasty hit of vegetables!
Asian Broccoli Rice

Ingredients
- 2 heads of broccoli (approx. 500g)
- 1 onion, finely diced
- 2 cloves garlic, minced
- 25g fresh ginger, finely grated
- 1 red chili, finely diced
- 2 tbs coconut oil
- 1 tbs fish sauce
- 1 tbs tamari sauce
- Juice of 1 lime
- 15 snow peas, sliced thinly
- Handful fresh mint, chopped
Directions
- Step 1
- Cut broccoli into large pieces and add to food processor. Blend for 1 minute until mixture resembles breadcrumbs.
- Step 2
- Heat coconut oil in a large fry pan and add onion, garlic, ginger and red chili. Cook for 5 minutes until soft and caramelized.
- Step 3
- Add broccoli, fish sauce, tamari sauce and cook for a further minute. Stir through lime juice, snow peas, mint and remove from the heat.
- Step 4
- Serve topped with extra chopped chili and fresh mint.
