It takes a little time to prepare the beetroot and apple for this salad, if you’re after a quicker option you can easily grate the beetroot and apple. It will still work just as well and taste just as good!
Beetroot, Apple & Feta Salad

Ingredients
- 2 large granny smith apples
- 2 large beetroot bulbs
- ¼ red onion, sliced thinly
- 3 tbs white wine vinegar
- 2 tbs extra virgin olive oil
- pinch pepper
- 100g feta cheese, crumbled
- Fresh mint and basil, for topping
Directions
- Step 1
- Peel the apples, then core them and slice them into thin strips, like match sticks. Add to a bowl and set aside.
- Step 2
- Repeat the same process with the beetroot, making sure you cut them into thin strips, as the beetroot stays raw in this salad. Add the beetroot to the bowl with the apple and add red onion, white wine vinegar, olive oil, pepper and feta cheese.
- Step 3
- Mix together well until combined and serve on a large flat platter.
- Step 4
- Top with an extra drizzle of olive oil, feta cheese and some fresh mint and basil leaves.
